My semi-annual soap box

It is that time of year again, time change. While I don’t mind the fallback as badly as the spring, I still think it would be better to stay on standard time year around. I have decided though that I would prefer to change than to stay on Daylight Savings time in the winter. I know that the Wyoming legislature voted for permanent DST, but I honestly have to wonder how they decided that their constituents wanted that. I have talked to many people who either don’t care or want permanent Standard time.

Another thing that has popped up during these discussions that I would like to address is the claim that DST was wanted by the farmers. I think that is a bunch of hooey. Most of the farmers I know work from before daylight until after dark. Why would they care what time the clock says?

Okay, enough about the clock and whether it should be permanent DST, permanent MST or keep changing.

The event that happens right after the time change is the General Election. Whatever you believe, get out and vote. I know many people who think that their vote doesn’t matter and won’t change anything. The truth is that if you don’t vote, it means a yes vote for someone you might not want to be in office. So, get out and vote.

There are some interesting races in this year’s elections, and we need to sift out who will represent us to the best of their abilities. After reading the coverage in the election edition of the Basin Republican Rustler. There are some great races, and some that are going to be harder to separate.

Vote your party. Vote your heart. Vote your conscience. Vote your mind. Just remember to GET OUT AND VOTE!!!!!

Here is one of those recipes that just doesn’t sound like it is going to work, but it does. The results are delicious.

Three Ingredient Dinner Rolls

2 cups self-rising flour. (or add 1 ½ teaspoon baking powder and ¼ teaspoon salt to every cup of all-purpose flour.)

1 cup milk (dairy or alternative)

3 tablespoons mayonnaise.

Mix all ingredients, knead until smooth, pinch small balls of dough place rolls on greased or lined baking sheet. Bake rolls at 375ºfor 8-10 minutes.

I have made these with gluten free flour, and they turn out well with a few tweaks.

For a gluten free option, use any all-purpose gluten-free flour. After mixing let the dough rest for about 20 minutes. Then rather than rolling the dough into balls, use an ice-cream or cookie scoop to portion them. I like to place mine just touching in a cast iron skillet.

There is no need for fat or eggs because that is all in the mayo.
